Snack: RASPBERRY PANCAKE MUFFINS (Recipe) . INGREDIENTS 1 cup of plain flour 1 egg 1/2 cup of milk (I used whole milk but you can use any) 1 tsp vanilla essence 1 tsp baking powder 1 tsp ground cinnamon 2 handfuls is raspberries 💖 METHOD 1️⃣ preheat oven at 180degrees (fan assisted) and in a mixing bowl or jug add flour. 2️⃣ add baking powder and cinnamon to flour and mix 3️⃣ now add egg and milk and stir until smooth (you may need to add more milk- if so do this gradually) 4️⃣ Grease up your muffin tray with a little butter or oil and drop 1 raspberry in the bottom of each section 5️⃣ now fill each section 3/4 of the way up (they rise) and cook for 10 minutes. 6️⃣ once fork can be inserted and removed clear or slightly golden, remove and cool before serving.
